Ingredients

  • Here is a quick microwave breakfast. The timing of this dish depends on the power of your microwave oven. Also, some like their eggs dry, others wet. Select the timing according to your preference. Remember the eggs will continue to cook for about 1 minute after they are removed from the oven.

2 egg whites

1 large eggs

2 ounces smoked turkey, cut into small cubes

1 tablespoon grated Parmesan

Salt and freshly ground black pepper

Several romaine lettuce leaves

1 medium tomato, sliced

Place 2 egg whites and 1 whole egg in a microwave-safe bowl about 7 inches in diameter. Add 2 tablespoons turkey, 1 tablespoon Parmesan and salt and pepper to taste. Whisk with a fork. Microwave on high 1 minute. Stir and microwave 30 seconds and stir. For drier eggs, microwave 30 seconds more. Arrange lettuce leaves on 2 plates and place tomato slices on top. Spoon eggs onto plate. Using the same bowl, repeat for second serving.
