Couscous with Green Peas, Mint and Coriander

1 cup couscous
1/2 cup frozen green peas
1 teaspoon ground coriander
2 tablespoons chopped fresh mint leaves
Salt and ground black pepperCook couscous according to package directions, adding peas and coriander when you add couscous to hot water. When ready to fluff with a fork, add mint and toss to combine. Season, to taste, with salt and black pepper.
