An absolutely yummy variation of fried mozzarella (and I don't like eggplant!. Especially wonderful in the summertime when the eggplant, tomatoes and basil are available at farm stands (or your own garden and picked only hours ago!

We really liked this eggplant recipe. It does take a little while to prepare and cook but is worth it.
