    The secret to skirt steak and flank steak is to be sure to slice it against the grain. These are the cuts of beef that are classically used for fajitas, and slicing against the grain (plus the marinade breaks the tough muscle fibers. Then it's just great!

    I also want to add my enthusiastic vote for the orange marinade!

    These fajitas tasted great. you wouldnt think that orange would make good maranade but i have never had better beef fajitas...and the didnt come from a restaurant! i cooked for 8 and all of us loved it.
