    I loved this recipe. The sauce was very creamy and the potatoes were excellent. I did leave out the tarragon and used a little less thyme though.

    I substituted garlic and rosemary for the thyme and tarragon. Also substituted white wine and half and half for the champagne and milk/flour. Everyone liked it! It was gone fast. Be very careful not to overcook the pork!

    Overall I loved the recipe. Only thing I would change would be to add a little heavy cream to the potatoes, and a little more flour to the sauce. I like my potatoes creamy and my gravy a little thicker.

    I made this one night when I was wanting to make something special for my family. It is a wonderful recipe! My hesitant husband, whom is normally a picky eater, at this very willingly. The flavor of the champagne sauce goes so nicely with the pork and the potatoes. My only complaint is that this recipe is listed as easy but it is not easy to make. You must be good at multi tasking and this is not a recipe for those with little cooking experience.

    This was my first time making this and I was making it for my wife and her two sisters, one of which is an extremely picky eater. We all thought that this was a very good meal. Would definitely make this again.

    I had horrible luck with this recipe. The picture looks good but mine was horrible! My husband actually made that gagging sound little kids make. The only thing I can think that I changed was wine for champagne. And the pork chops were cooked too fast to be tender. Yuk!
