I won't lie, I always tweak every recipe I make regardless of who came up with it. I ended up leaving out the mint and completely forgot to add the red pepper flakes (which I regret since I love spicy dishes. I did however add more tomatoes than the recipe called for and I threw in two sausages. I used my immersion blender and the result was a delicious, hearty sauce. The extra tomatoes meant lots of leftovers which I plan on putting to use as a base for lasagna. I can't wait!!

What I love about Giada's recipes is that they are simple, take little time and dishes to dirty, and are unique and tasty! This recipe is no exception! I used Roma tomatoes that I had on hand, and just quartered them, and I also sauteed some ground turkey with onions and garlic..and some Worchestershire sauce - and added to the pasta (for protein. I didn't want to go shopping, so I used whole wheat fusili pasta that I had. YUMMY! You *must* be a pretty big fan of eggplant if you want to try this dish. The distinct eggplant flavor is prominent, which I love, but others may not. It's such an easy and quick dish to make, that completely satisfied and comforted me on a cold night. Not to mention, it's healthy! I will definitely be making this again. :- Thanks, Giada!

Really wonderful recipe, the mint adds a great kick. It's very good the next day, too...cold as a pasta salad.

I loved this recipe! I saw it on tv and then decided to make it for my parents! They were very impressed with it considering that i'm only twelve.

The receipe was fairly easy to make. My teenagers enjoyed the extra heat and even my 5 year old niece asked for a second helping.

Giada is at her usual excellent best with this recipe. Every recipe I have ever tried from her site has been wonderful and given me rave reviews!!! In our house a rave review is everyone saying: "mmmmmmmmm" after they taste their food!

I took a lot of suggestions from everyone's reviews and used an onion, red pepper and basil. It was great! It made enough for me to freeze half for later - hopefully it will be just as good then.

I changed a few things in the recipe to our tastes but it was a great base recipe to build on! I omitted the mint and added fresh thyme and rosemary to the roasting vegetables. I also added a little ricotta to the pureed mixture and some parsely. I didn't puree all of the vegetables just so there would be a little variation in texture.
