    This was a super easy recipe to follow and modify with great results! I roasted two small eggplants, 6 plum tomatoes and one large onions and fresh garlic. Instead of mint, I used dried basil and italian seasonings. My roommate and her family loved it!

    I was watching this episode tonight after work and realized I had all the ingredients in the fridge with the exception of mint, but I had plenty of basil growing on my balcony.

    It was good, but needed more kick. I liked the creaminess of the sauce, but next time I'm going to add another layer of flavor by roasting the veggies with fresh herbs.

    Something I did notice about the puree I made tonight was that it could be interesting with maybe a little nutmeg or even cinnamon. I may have to try that another time.

    We loved this recipe! Very easy and a nice switch from the standard pasta and marinara. I love all of the veggies and the fact that my family is unaware of them! My eggplant was smaller so I threw in a zucchini. This will be in the regular rotation. Thanks, Giada!

    This recipe is delicious and healthy. I added zucchini to the roasted veggies.I did not have any rigatoni in the house, but substituted multigrain penne and the nutty flavour of the pasta was a winner with the sauce providing an extremely satisfying and filling meal.This is a definite keeper, the kids loved it and it was easy to make.

    This was an amazing simple recipe that was so good. I didn't have any mint so i left that out, reduced the red peppers and increased the garlic to reduce the spiciness for my mom and it was amazing. I can't believe how only a couple of ingredients come together to make an amazing sauce

    I just made the basic sauce, roasted eggplant, tomatoes, garlic, salt & olive oil and really liked it. I thought this would make a great base sauce on a semi healthy, sorta clean pizza. I tried it today on a home made pizza... worked out great! Very yummy.

    My husband and I thoroughly enjoyed this and I will make it again. I did think it was a little "minty" and will either leave out the mint or reduce the amount the next time I make it. The best part was it that it was quick and simple to make - in 40 minutes, dinner was on the table!

    I was so excited to make this, especially after watching the show. However, once I tasted it I was really disappointed. I think this recipe would be much better without the mint. But, that is just my opinion. Happy cooking.
