    I couldn't get over how easy this was, yet tasted great. I gave this recipy to my familyand friends. Waiting for their reviews. I used basil instead of mint, since I had both.

    Most people wrote that they used basil instead of meant, so that's what I did! It was really good,my husband and 7 year old son loved it!

    This recipe was absolutely fabulous. My husband and I do not even like eggplant. I did peel the eggplant and due to dietary restrictions I did leave out the parmesan cheese and we loved this dish.. It is not bland, but just the opposite. It has some bite to it. This is a fabulous, easy recipe and really something different to prepare ofr your family.

    I found it kind of bland as well, but I forgot the red pepper flakes. My 10 year old loved it though so it was well worth making.

    Though this dish might not look like the most appetizing pasta side you'll ever see, it is very tasty and savory. Leave it to Giada to mix roasted eggplant, tomato, and garlic, puree, and toss with pasta. I omitted the mint and used basil instead, and it had a pesto-meets-hummus flavor which was really unique.

    Just not good. Everything was going to so well until it was time to taste it. It looked unappealing and the taste was the same.

    I made this dish using basil instead of mint and foregoing the pignoli. It was, as Giada loves to say, "Perfect." I even served it to someone who refuses to eat eggplant (without saying what it was and got a rave review. LMAO.

    This dish looked great on TV and it looked really yummy when I was done preparing it. What a disappointment though. It was so bland. I don't know how anyone gave this 5 stars. It took a lot to make it more enticing. Added more salt, red pepper, parmesan, and let it sit for a few hours. Nope, still BLAND! My daughter finally added some marinara to hers and said that helped. I added sauteed mushrooms and kielbasa to mine. That helped. Threw out the leftovers and the recipe. Have plenty of keeper recipes from Giada though. ;

    This is a wonderful recipe I have been making for a long time, mum and I enjoy cooking this in the kitchen.

    It's wonderful, the texture is really nice with the pine nuts. Mmmm. I'm making this tonight and really can't wait.
