Love this salad at my fav Vietnamese Resturant and tired to make it tonight. The cilantro was overpowering. I cooked the noodles 6 min and they were still very firm. The sauce was very salty and I even cut back on the fish sauce. The family ate about half of it before they said enough. Sorry, won't make again.

Love it! Made it for my parents and hubby for dinner and they all asked that I please make a bigger batch next time. Very light and flavorful.

My husband thought this was too fishy and I even cut down on the amount of the fish oil. I thought it was a lot of chopping, and not great. It was not bad, just nothing memorable.

I loved this recipe. I made it for my husband this week, and he really liked it. His only criticism was that the cucumbers should be smaller, like diced or julienne like the carrots. They were hard to incorporate into the salad and sort of fell to the bottom of the bowl. I also used lettuce instead of cabbage, mainly because I grabbed the wrong thing at the grocery store, but it worked well. The lettuce made it very similar to the noodle bowls at our local Vietnamese restaurant. So simple, but so good!

I thought it was a light change for summer. Great way to add veggies. I liked (not lovedit. The family didn't care for the rice noodles. Probably won't make again.

This is a great noodle salad to play around with. I added sauted shrimp with white wine, garlic and red peppler flakes. It was PERFECT!

This is a very good salad, but I took out the cilantro and jalepeno and it was much better.
