Fabulous unexpected flavor. I just put this in my favorite Italian dish, let it sit out on kitchen countertop (covered and enjoy for a day or so and pretend I am in Italy. It just gets better the longer it sits like caponata.

I was tired of sweet recipes for butternut squash and found this one. It is unusual to find a winter squash paired with a vinegrette like this. I loved the way it tasted, and my wife liked it too. I really went well with the rest beef bracciole. We have already decided this will be made again.

I put a little more garlic and less red pepper flakes, just my preference, but it was really nice.

We usually just bake butternut squash after sprinkling it with a bit of saly, pepper and nutmeg. We thought we'd try something different and came across this recipe. We weren't sure how what seemed to be a little marinade was going to effect so much squash. Also we questioned whether the squash would get too cold after setting for 20 minutes. Neither concern was justified. The marinade made the squash taste delicious and the squash remained warm throughout dinner. This butternut squash recipe got two thumbs up from my wife, my son and me. Definitely a keeper that we will be making again. Thanks Mario.
