The meatballs are EXCELLENT! I use parmesean cheese usually (it's cheaper and fat free ricotta. I make the meatballs with spaghetti. We tried the florentine once and didn't like it. It was too bland. Maybe try half or 3/4 of the macaroni next time. The meatballs though go great with everything and are even good as a low fat snack!

Such an easy meal to prepare! The fragrant aroma of fresh Rosemary and fennel filled my kitchen. The neighbors were ver envious! Another superb recipe Rachel! The whole family loved it!!!!

Loved this dish! I used ground turkey and 1 box of spinach and we both totally enjoyed it. My meatballs were so tasty with the rosemary and fennel seed. Perhaps people who had very bad results with the meatballs overmixed them making them too hard. The pasta was so creamy and tasty. A definite winner!!

So disappointed! I went to Whole Foods and spent a fortune on the best cheese and other fresh ingredients I could find because this looked AMAZING! The meatballs were fine, but the mac and cheese tasted like NOTHING. I even used a lot more cheese than it called for and couldn't taste my $10 parm-reg. What a let down.

My husband and I liked the meatballs, but the mac and cheese was not a hit. I'll probably use the recipe for the meatballs in a couple of other dishes, but the mac and cheese recipe is going in the trash.

I was leery about cooking with ground chicken, but I decided to give this a try. My roommate and I loved the flavor and texture of the meatballs. The recipe was extremely easy to make, and the ground Purdue chicken I bought was not on sale, but it was only $1.49 a pound, which is a bargain. I used 2 pounds of ground chicken and did not increase any of the other spices, but I did use a 15 ounce container of ricotta. The florentine mac and cheese was a nice accompaniment, but it needs an additional kick to it - probably more cheese. I will definitely make this again.

I have made this a few times and it is just fantastic. The meatballs are great and NOT dry at all. I cooked them at 400 and they turned out great. I did add some shallot to them though. I used both boxes of spinach and it tasted great. If you use a good quality cheese and seasonings, it is not bland. I also made this with asiago cheese and it was just as yummy! My kids (4, 2, & 1 loved every bite, spinach and all!!!
