    With the time involved, I expected WOW. Not so much. I think the base would be much better served by a topping of mashed sweet potato, without the time consuming polenta. Sorry not a favorite.

    i made this twice. the flavor is delicious. the first time i read the comments and made the changes on the amount of milk, but decided to make it the second time according to the recipe. DEFINITELY TOO WATERY!!!! i would definitely use half the milk according to the way you like your polenta

    I agree that the dish was much too wet. I cooked it an hour, and it seemed to help it have better texture. I'm not sure just how "creamy" the polenta is supposed to be. I might try to make it again with a little less milk in polenta, and actually drain the meat mixture more. Or I just might not make it again at all, unless someone can tell me what I am doing wrong.

    I did some swaping on this recipe as well. I used turkey instead of sausage, and salsa instead of tomatoes. I didn't have time to make the polenta, so I used store-bought, heated it on the stove with about a cup of skim milk. I also didn't use any cheese. The casserole was absolutely wonderful, and a very different take on the classic shepherd's pie. I will definitely make again!

    I subsituted turkey sausage too and I loved it (I would have loved it just the way it was originally written but I am trying to be a tiny bit more healthy. It was better on the 2nd night but regardless of the night, we enjoyed our servings!

    I substituted ground turkey and a bit of ground pork for the sausage in Emeril's recipe. I used mild salsa instead of the tomatos, egg beaters, and substituted skim milk for whole milk. The result was a very tasty, reduced calorie version of Emeril's recipe. I would probably use a medium salsa next time to kick it up just a bit more.

    Maybe I did something wrong but the Polenta was a bit too grainy and the whole casserole was too watery. I'll try cooking it longer next time (but I don't think I will make it again. My husband really liked it. It's very fattening, so I would only make it once in a while

    This recipe was very delicious. I made a couple of changes. I used egg beater and 2 regular eggs to cut down on the cholesterol. Since I didn't have any mace I substituted a pinch of nutmeg, I also cut back on the Parmesan cheese. It turned out great, and I will probably make it again.
