My "go to" pie crust for EVERYTHING. This recipe allows you to tweak and make the pie as rustic as you want. Freeze the dough and use whenever ripened fruit needs to be used up. If you love lemon, or want a crust that has an extra kick (as you can use any "kick" you want thanks to Jamie's relaxed approach ; you will def love this recipe. Love Jamie Oliver!

Lovely! This makes a classic English-style fruit pie. The addition of stem ginger in syrup is wonderful and compliments the fruit. For anyone annoyed about not getting all the recipes from this episode, try your local library - I got the book out from mine.

I made this pie last night. But the crust seemed very dry. Had great difficulty trying to get it all mixed together to even put into a disk. I was ready to trash it..but too much time and money in it. Made the pie. Taste was ok. Luckily, I have all of the Jamie at Home shows recorded. So, I watched the Pastry episode (after the fact. His measurements did not match this recipe. His called for 500 grams of flour = 17.64 oz. This recipe says 3 1/2 cups of flour?? And 250 grams of butter = 8.81 oz, conf sugar 100 grams = 3.53 oz. I will try and make this again with the proper measurements next time. I don't know if this was a conversion issue with Food network or Jamie. But I loved watching his shows. So, no poor rating from me! Hope he will have more shows in the future!

Very good but I have a couple of comments & made a couple of additions to the recipe.
The cinnamon appears in the fruit ingredients so I added it to the fruit but discovered later it goes on the pie topping. The egg in the ingredients for the fruit isn't mentioned in the method; I omitted it.
I made my own fresh ginger-in-syrup by boiling it in honey; it seemed to work well.
I added a pinch of salt to both the pastry & fruit. To the fruit I also added the juice of half a large lemon with a little more sugar to counter.
I added all the juice with the fruit in four small pies & there was no free liquid after cooking.

TART & TASTY
Yes, this is a very tart pie, and YES most English eat custard with their desserts. My father in law was born and raised in England, and he eats custard on all desserts. Americans make their pies much more sweeter than the English.
Now, for all the WHINERS in the bunch, geez, the food network gives you Jaimie's website! I went there and got the recipe for the Steak and Guiness Pie. His site has ALL of his recipes on it. BTW... that steak pie was so good it will make your tongue do a back flip and slap your brain!

I made the pie while blackberries are in season here and I thought it was pretty good, but some words of caution are in order. The pie is pretty tart from the combination of granny smith apples and blackberries. I even added a little more sugar than recommended, but the pie is so tart that it really requires you to eat it with ice cream, whipped cream, or anything to tone it down some. I suppose this is why he eats it with custard on the show.
I did make a mistake with my pie and added the hot apple/blackberry mixture right into the pie shell, not noticing that the recipe states to add the "cooled" mixture which can be easily missed. This just made the pastry topping immediately begin to melt. Therefore my pastry probably could have been a little better and flakier.

when i watch jamie, i have a pen and pencil ready, i might have to rerun the show to get the detail i want but then i have the recipes and techniques . later i transfer it to a recipe card. i find that sometimes the recipies vary on the food network from the chef to the text in the recipe section but it can be worked out, a similar recipe elsewhere will help with a missing ingredient. if i want to copy one of jamies creations its worth the effort. im off to make his apple blackberry pie but looking at the picture it makes alot of juice, think ill add some flour or corn starch to thicken it a little. i love to watch him cook, jamie is awesome and he is still so young. i hope he keeps on with his creations, he is a true artist.

This is the place we RATE the recipe people; not advertise your laziness to actually write it down yourselves. You sound like children!

I don't know why Food Network doesn't go into this review and clean out all the trash. I agree that it's terrible to give a recipe low reviews because of an issue that doesn't even relate to the recipes. Hey, people, ever heard of a library? Free access to all the recipes in the world? Ever heard of buying a book? You can get them on the internet at lower than retail cost. Ever heard of taping the program and working the recipe out on your own? Ever heard of looking at another person's perspective? Me, me, me! Sick of it.
