    My first attempt at Polenta! I cut the recipe in half. All of the liquid absorbed about 25 minutes into the cooking time. I should have kept adding liquid because there was a slight grittiness to the finished product Tasted good, though, and had a creamy, light texture, and no lumps. I will try it again soon.     I cut the recipe by half and it was perfect for 4 reasonable servings however it's so good that cutting it in half would be better for 3. This is such a YUMMY recipe! You could probably leave out the creme fraiche and not notice it too much if you don't have it on hand. This totally compliments a fillet and asparagus dinner. Can't wait to try it with something else next.

    I had to use corn meal as Publix didn't have polenta and used sour cream as i didn't have creme fraiche and it was still amazing! Think i'll add cheese next time.

    This was easy and absolutely delicious. I stirred it more frequently than called for as I found it sticking some. This is worth the time...and fabulous with short ribs.

    THE BEST & EASIEST! AFTER TRYING SEVERAL RECIPES OVER THE YEARS, I HAVE FINALLY FOUND THE ONE I WILL USE FOREVER. I DID SUB SOUR CREAM, BUT THAT WAS THE ONLY CHANGE I MADE, AND I WAS THRILLED WITH THE RESULT!

    OMG! I just made this for dinner. It was as creamy and good as any polenta I have eaten in a restaurant. I halved the recipe which made plenty for two of us with leftovers. I used sour cream because I didn't have creme fraiche on hand. Delicious!

    Very tasty! I halved the recipe and used chicken stock instead of water to add more flavor. I usually make Alton's recipe in the oven but needed my oven for popovers, this was a great stove top version.

    Delicious! The best polenta I have ever made. I did substitue 1 cup of milk with 1 cup half-n-half and used milk for the other cup. It was amazing!!!!!

    I tried this tonight for the first time and my non polenta loving daughter enjoyed it. I added just a tad of red pepper flakes, I used half the amount of creme fraiche because I used sour cream in its place and I added a tsp of ground garlic powder...AWESOME! Just remember to stir often and adjust seasoning at the end. Loved it! Thanks Emeril.
