This is good with mango instead of papaya, and I omit cilantro.

It was so easy to make and tasted fantastic! I bought really good shrimp and it was definitely worth it. I might try making it with mangos next time - but just because I also like them, not because I didn't like the papayas - they tasted great. I loved the crunch the peanuts gave...yummy!

Although I consider myself a novice cook, I enjoy cooking and do 90% of the meals for my wife and two teenage daughters. My wife was not reallly excited about this recipe since she doesn't care much for Arugula. In fact when I plated this, she wanted the shrimp off to the side. After a little coaxing she relented and tried it served as suggested. She was amazed at how the different flavors came together. She said this was one of the best things I have ever cooked and I will humbly admit that she is probably right. Try it, it's wonderful.

This was incredible! I used super huge jumbo shrimp. It was perfect for a light dinner. I just made some extra shrimp for the kids. Thanks!
