This dish is absolutely superb, one of the most exquisite combinations of flavors I?ve ever experienced. My husband and I were in shock and could not stop eating until our bowls were spotless. Fresh shiso leaf is a must. I admit I was so intrigued, reading the list of ingredients, that I had to make it right away; thus, I had to substitute jumbo prawns and a small tin of chopped clams for the salmon and oysters I did not have on hand. No matter, my husband was still extolling it hours later. This is SO good. Thank you, thank you, Charlie Trotter, for such a unique -- and actually fairly simple recipe.
