I actually used poached chicken, shredded it and added it into the quesadilla along with the cheese and jalapino. It was delicious and gave me something to do with the chickens I used to make my chicken stock!

This recipe is GREAT! The black bean sauce turns a regular quesadilla and a sauteed piece of chicken in to a yummmy meal! Totally takes it to the next level! Awesome for a beginner and could even be used as a meal for a casual dinner party! Some sour cream and cilantro to garish and voila!!!!!

The Black Bean sauce really makes this an All star in my home. The organization of the Quesadilla needs some work but, we put the chicken in the quesadilla.
