    I'm from New Orleans and Red Beans and Rice on Mondays is kind of a tradition. But this recipe may take over the slot reserved for RB&R! We used Konrico seasoning in place of Emeril's, I use Konrico creole seasoning on almost everything that calls for salt and pepper condements. This is a GREAT recipe for beans! Everyone loved it!

    DELICIOUS! A great Lenten meal for my family (minus the ham! I used Penzey's Cajun spice instead of Emerils (sorry, Emeril, but didn't have time for the mixing! and it was FABULOUS!! Next time I will throw in some rice or small pasta in the last hour of simmer and it will be perfect!

    I Loved this recipe. It SO reminded me of last years trip to NOLA. I did not used green bell pepper, because I'm allergic to them, and really, nothing was missing. i also skipped the step of adding the Essence to the pot, and just tossed the shrimp w/ it. I put the extra spice on the table, and my boyfriend took advantage of that. Excellent meal! I will definitely make this again. Thank you, Emeril!

    This is a great recipe. I used 3 lbs. of shrimp (because 1 1/2 lbs. just isn't enough and I added 1/4 C. of hot sauce when adding the salt and pepper. They are good on day one, but excellent on day two. I will make them the day before I want to serve them in the future.

    I am from Louisiana and I have to say my own white beans are really good. I tried this recipe and all I can say is "WOW!" My husband and father in law think it's the best thing I've ever made! Very easy and so good. I think it's more than 8 servings. I have a lot left over - which is great. White beans only taste better the next day.

    If you like white beans, shrimp, and comfort food, you'll love this dish! Just make sure your shrimp aren't EZ Peel and you won't have to work for your supper as I did the first time I made it.
