I've made these several times and they have been great every time! A special treat for a weekend breakfast, the lemon zest in the batter works really well with the blueberries.

OMG! Amazing pancakes, probably the best pancakes I've had in ages! Highly recommend this recipe. Others were right in the amount of pancakes this recipe makes though. I got about 6 medium pancakes from one recipe. Blueberry sauce is a perfect topper for these pancakes, although I can't comment on this sauce recipe since I made my own version.

I made these pancakes the other morning for my husband and 18 mo. old son. I followed the recipe to a "T" They were fabulous! Very light and fluffy. I agree with the other reviews when they say it doesn't make alot of batter. My batter only made about 6 pancakes! All in all these were delicious and definitely make the blueberry syrup!

These were really fluffy and light. I did make a change I used 1/2 corn and 1/2 sugar free syrup. They still turned out great.

Emeril is a genius! I love blueberry pancakes, but putting them as a sauce on top instead.....YUMMY! The whole pancakes just soaked in blueberry goodness. Will definitely make this a keeper.

Yum! Light and fluffy, nice and tender. Didnt have any lemon so used just a tad orange zest and a splash of orange juice. No blueberries either, so we used just pure maple syrup. Cant wait to make these again!!!!

The pancakes are light. I do not like pancakes that hit the bottom ofmy stomach and last until dinner. I had misplaced this receipe and was not sure where I found it. My husband was disappointed in the pancake receipe I found to take its place. I am glad I found it again.Thanks for a light, satisfying pancake.

The recipe was excellent. I love pancakes, but did not feel like going out for breakfast. So I decided to find a pancake recipe that would satisfy my craving. Yes these pancakes did the trick. This is my go to recipe for tasty homemade pancakes. Thanks Emeril :
