    This recipie is absolutely wonderful! I share the sentiment of another reviewer when I say I will never repeat never buy box mix again. This recipie is easy to follow most ingredients you already have in your kitchen and the results are amazing.
    Everyone makes changes to a recipie to fit their individual taste. The changes I made were using organic ingredients from organic whole wheat flour to organic evaporated sugar cane juice. The results are deliciously sinful with none of the guilt. I loved it.

    This is the best pancake batter ever. If you've made enough pancakes in your lifetime, you should know how to adjust a batter to get the consistency that you want. And believe me, once you try it, you won't want to go back to store bought. It does take some prep time, and I modified it a bit by putting adjusting the amount of buttermilk (a little more to make it a thinner to please my family. I also added the blueberries to the batter rather than make the sauce. This is in part due to my family's desire to have maple syrup with anything called a pancake. It was a great hit. The lemon and blueberries are just a great taste combination. You won't be disappointed.

    These were THE best pancakes that my family and I have ever had! Super easy and the lemon in the pancakes are amazing! The blueberry syrup goes perfectly with them too! Although the recipe suggest 1 T. of butter to be melted on each pancakse, I didn't find that necessary at all. I didn't want the butter to over power the lemon taste. Enjoy!

    I am a very good cook, but for some reason I was never good with pancakes. I haven't made pancakes in years, but my boyfriend begged me to make him some, so I tried these. They were perfect. In his words, "you put IHOP to shame." The texture of the pancake was light and fluffy, and the pancakes and the syrup were the perfect balance of flavors. The only complaint, and this is very minor, is that it made way too much syrup. It's okay though, I'll just have an excuse to make the pancakes again to use it up. Great recipe, Emeril.

    Oh my, this is just the best pancake I have ever eaten! I am always looking for good recipes that are also easy to make. I run a hospitality ministry and I cook for 40+ Marines and Sailors each week. This recipe always get raves and makes me look good. The lemon flavor and the tender fluffy texture is wonderful!     These pancakes were some of the best I've had! That were much lighter than some of the heavier more dense pancakes I've had before. The lemon zest cut some of the sweetness from the blueberry syrup and was the perfect combination. Definitely recommend to make a double batch because one batch only made about five pancakes.

    These are the best pancakes I have ever eaten! All of my kids loved them and I can never get all of them to love anything at the same time. I will double the recipe the next time I make them because I only got 7 pancakes out of this batch. I'm going to surprise my husband with them this Sunday for Father's Day!
