    Excellent! That is, the batter is a basic buttermilk pancake recipe with perfect texture and rise. The addition of blueberries is obvious. But the lemon zest gives the flavors and aromas a freshness that is irresistable! Use the zest of 2 small lemons.

    Don't be put off by the seemingly thick batter; these pancakes are delicious and come out wonderfully light but not so airy as to be unsubstantial. I loved the moist texture, and the lemon zest really brightens the flavor.

    This is my favorite way to prepare pancakes. I've even shortened the recipe and just added lemon zest to plain pancake batter and it's still fantastic.

    These pancakes were incredible! They weren't difficult to make but they tasted like you had gone to a lot of trouble. I'll definately make these again.

    This is an easy recipe to prepare and you can make it ahead of time and freeze the pancakes. Just warm them in the microwave. I use was paper between each pancake so they do not stick.
