    I've been making this soup for years. I have an Old Wives Tale recipe that was printed in the Oregonian years ago that had been sized down to 6-8 servings. I have made a few changes over time like replacing the water with beef stock, using crimini and chantrelle mushrooms, replacing the cream with 1/2 n 1/2. When I make this for people, I always have copies of the recipe on hand to give out because it's so good.

    This is the exact recipe, as I called them years ago and asked for the recipe and this is the one they gave me.
    All I can say, is that this soup is amazing. Yes - it makes gallons of soup - so cut down the recipe for a family or freeze it.

    But the flavor is fantastic - you won't be disappointed. :

    While I have not tried this recipe yet, I have had the Hungarian mushroom soup that Old Wives' Tale in Portland is famous for. It is fantastic! So if this recipe is anything like what the restaurant makes, you are sure to like it. I was pleasantly surprised to find this recipe online (I specifically looked for it because I love Old Wives' Tale's soup and was craving it.
