This was great. I used the chipotles in adobo... about 2 tbsp. The flavor was great but I will add more next time for more spice.

Excellent! Made for hubby and he loved it! Followed recipe except for the following because all we had: Used 1T of puréed chipotle, 1 lb of high quality grated extra sharp cheddar, 1 lb. o. Roma tomatoes, and fresh sourdough bread for the topping with extra sharp cheddar in a 9x13.
    Fabulous.

loved this recipe....i used fresh tomatoes and more jalepenos than what it called for to make it spicier!

Upon reading the recipe, I knew this wouldn't be spicy enough for my fiance and I, so instead of using jack cheese and a full can of diced jalepenos. It was near tasteless, and the cheese came out stringy. This isn't my first macaroni and cheese rodeo, so I think I'll stick to my regular recipe.

I've had this recipe for awhile and made it many many times. The original was by Sara Moulton and it looks like Cooking Live decided to steal the credit.

Use great cheese, no cheap stuff. Add pepper flakes or extra cayenne or extra jalapeno chilies - to really bring out the "spicy" part of the recipe. Instead of elbow macaroni I use Cavatappi and its always great.

Sooo good on a cold night. Make some extra sauce on the side, as I feel too much of it gets absorbed when you bake the dish.

Did I make the same recipe that got five stars? I found the flavor to be quite bland despite the fact I added one can of plum tomatoes and one can of rotel. I was disappointed and wouldn't make this again.
