this is a good recipe, however it is not traditional. To make it traditional you should use chicken fat instead of butter.

the longer you soak the matza the softer it will soak the egg up and become softer when cooking. You can put anything you want on it during Passover we used to make hamburger helper with matza instead of noodles and it was real good, you can use any meat you want or fish or veggies.

This recipe is really good. I kicked it up a little bit by adding chopped up Salami. Just fry the salami in the butter and oil for 2 minutes prior to adding the matzo mixture. YUM!
This breakfast is easy and the whole family loves it.

It could use a little more flavor. I have had this dish at a few deli's and they add saute onions. The second time I prepared this recipe I did add them and it was more flavorful
