I love Mexican rice and thought I'd try this. Ick. Way too salty, but that's what comes from eating packaged rice. I also have some issues about how it was presented on the show. First off, what makes this "Yucatan"? The main flavors are saffron and pimento, which are both Spanish, but not Mexican. And I shouldn't say that saffron is a flavor because I used Mahatma rice, just like Sandra suggests. When I looked at the ingredient list, I saw that saffron was #11 out of 12 ingredients. It's true that you don't need a lot of saffron (and that saffron is expensive, but as this rice has almost no saffron--and certainly no saffron taste--why bother? Sandra also says that using frozen chopped onions is a cost-saving move, but those run a whole lot more than buying a whole onion. At my local store, one onion costs me about $.69 and weighs about half a pound, but a bag of chopped onions, which weighs 12 oz, costs about $2.

I have made this twice and the second time around I sauteed the onions before adding the remaining ingredients. It made quite a difference. I definitely will make this again.
Also, I agree... don't rate until you have actually made the recipe. And Luby from Lafayette, LA needs to proofread the recipes before posting her reviews.

Actually, if you recall the episode, which obviously you don't, she made a POINT of using fajita seasoning in Potato Tacos, not in the rice. You are supposed to use pre-seasoned saffron rice, plus the peppers and onions. That's what gives it the flavor. I thought it tasted great, since I actually did make it, but I am only giving in 4 stars because I didn't actually like the creamy texture; I prefer a fluffier rice, but that's just me.

You are correct - there is an ingredient missing. It's either fajita seasoning or taquito seasoning. She made a point to say not to use regular taco seasoning, but to use this one instead. I can't remember exactly what she said so I'll have to watch it again on Monday afternoon to catch the type of seasoning. I haven't tried it, but I'm giving it one star because a missing ingredient can either make or break the recipe. Someone needs to proofread these recipes before they are posted.

This recipe really appeals to me, but didn't she add one other ingredient? Maybe fajita or taco seasoning? Guess I wasn't watching carefully. Either way, I think I'll give it a try.
