    After reading the previous comments before making this recipe, I decided to omit the salt and the second onion, and the gazpacho turned out great! I also hate parsley so I left it out and just added some extra oregano. It was extremely flavorful and fresh. Gazpacho is my husband's favorite and he told me to put the recipe on file. The other change I made was to use the feta as a garnish once I put the soup in bowls (I was only cooking for me and my husband so I was worried that the feta would dissolve in the leftover soup, which I will definitely be eating tomorrow. I plan on making this recipe for company!

    The powerful onion taste ruined this recipe for me. That's all you could taste. If I ever made it again I would use half an onion, let it sit overnight and then add more if neccessary. Looking at the other reviews about the salt warnings I didn't add the kosher salt and I even rinsed off the olives before dicing them. I ended up adding more salt than the recipe even called for afterwards, but it's hard to tell if it really needed the salt or the onion just ruined the whole thing. We ended up throwing almost all of it away.

    Ok, no disrespect to the lady who commented about not being "allowed" to eat feta cheese while pregnant, but .... seriously? I am Greek. I wasn't born ill or with defects because my mom and dad ate feta cheese. Greek (and other races women have been eating feta cheese for HUNDREDS of years - even prior to the modern pastuerizaton process - and have not become ill or died. Nor have their children. I think too many women today are way too ridiculous with starving themselves because cheese may have bacteria, or hot dogs may have lysteria, or chicken may give you salmonella, or fish may give you mercury poisoning. Get a grip!!! What do you think our forefathers and foremothers ate hundreds of years ago (excluding the hot dogs ... if everyone was getting sick and dying, then how the hell are we all here? That was probably the most ridiculous posting I think I have EVER seen.
    But, yes, Ina oversalts her food! Kosher salt HELPS with the reduction of sodium, but it's not the healthiest option, either. Use all salts in moderation. :

    This recipe looks awesome and healthy except for the amount of salt added. 4 tsp of salt=~9600mg of sodium. This must be salty enough with the tomato juice and olives. I'll give it a try w/out the salt. By the way, kosher salt is not that much lower in sodium than regular table salt. 580mg Sodium vs 600 per 1/4 tsp

    We loved this. To the person who complained about too much salt, did you use Kosher salt? Kosher is about half a "salty" as table salt.

    The Greek Gazbacho is wonderful, however, your not allowed to eat feta cheese or any other soft cheeses while pregnant. The bacteria in them can be harmful to the baby.

    I considered another reviewer's comments about the salt in this recipe and decided to salt it at the table. I am glad I did, it suited my tastes just fine with the olives, feta and vinegar. I used a chopper rather than the food processor and the result was fantastic! This is not only very flavorful, but incredibly healthy and fits perfectly with my diet. This soup is definitely a new fave.

    I don't know what's wrong with Ina but her recipes are always too salty....no matter what I try I always use far less salt than the specified in her recipes.
