Loved these enchiladas. Easy and tasty. Paired it with Ingrid's pico de gallo recipe. Very fresh and good. Everyone loved them.

very easy to make & always a favorite-- my tweaks are to add enchilada sauce to the bottom of the pan before placing in rolled enchiladas and using salsa verde canned for the sauce on top....makes it taste a bit more authentic!

This recipe was definetly fast and easy but on its own didn't have much flavor. The salsa is what gave it flavor. I guess the good part about that is that if I were to bring it to a potluck, most of the people at work have different palettes, especially when it comes to spice, so having the salsa dicate that is great. I will definetly keep this recipe because it is easy enough to allow me to make my own changes but have a good base.

I thought this recipe was very tasty... I did use taco seasoning and jar salsa like a few of the reviews suggested. We will definitely be having these again soon.

This was very tasty and the whole family enjoyed it. Used bottled Salsa instead of making it. Will be eating this again. YUM!

True, it doesn't seem like a true Mexican Enchilada, but was still very good! Great flavor. It was time consuming however, not the "fastest-ever". Still worth it though.

I made these enchiladas last night. They were great and a big hit with myself and my husband! I did tweek the recipe just a bit... colby/jack cheese instead of cheddar, white onion instead of purple onion and I added a half package of fajita seasoning mix to the chicken mixture. Very flavorful, easy and will make again.

These were the best ever! I used the taco seasoning for the chicken and also used the salsa with the other additives for the topping, and stuffed that chicken in the corn tortillas, rather than the flour tortillas! I work all day and enjoy viewing the recipes of the day at work at my desk, and share them at times with my co-workers! My husband loved these, and they are even better the next day, keep the recipes coming!

These are quicker than other enchilada recipes, but I wouldn't call them easy. You do have quite a bit of shredding, chopping and mixing and rolling to do. Work wise, it's moderate. The taste was fine. I did double the salsa per a reviewer's comments, but used only 1 1/2 of the recipe. I increased the cheese. The flour tortillas held together better than corn ones do in enchiladas, in spite of one reviewer's comments that all enchiladas are made with corn tortillas. They don't come in this size, I think, which is another problem.
