this pudding is absolutely lovely.... it is THE rice pudding recipe in our house. I use brown rice for both the nutrition and the texture ( we prefer it, and it is just delightful!

Easy to make. Tastes good. My children liked it better without the lemon zest, and I used less sugar second time. Really good though.

I make this at least once a week now. It's very good warm and even better cold the next day.

Changed it up a little: I used a can of light coconut milk in place of 14oz of regular milk, reduced the sugar to 1/2C & added 1/4C of shredded, sweetened coconut. The result is sweet, tender and yummy and EASY! Even my picky eater was chowing this down! I'm definitely keeping this recipe.

Was very easy to prepare and the lemon zest gave it just the right flavor. It was very yummy , just like Tyler.

This recipe was easy to do and I just used some rice left over form Chinese takeout. I also omitted the raisins as I hate most fruit in my puddings. My 3-year-old even loved it.
