Great flavor, but mushy. Cut the liquid (chicken broth instead of water, to 4 cups. 6 is WAY too much.

I thought this was great, although mine came out a little watery. Maybe it was because I used a normal pot though (speeding up some of the cooking times. The flavor was wonderful though!

Excellent. Instead of a whole chicken I used two boneless, skinless, chicken breasts. Also, I substituted chicken stock for the water. Skipped the parsley altogether.

This is REALLY good, and, as others have said, totally worth the effort. Honsetly the best jambalya I've ever had, anywhere. A few modifications that we made:
- 1/4 tspn of salt (total. I think you could totally skip the salt and wouldn't be able to tell.
- substitute 2 cups of chicken stock (not broth for 2 cups of the water.
- Use Aidells Habanero & Green Chile Sausage. This is really spicy, but VERY good in this recipe. It is precooked, so you don't need to do the browning step.
- Substitute fresh cilantro for the parsley.
- Used two whole boneless skinless chicken breasts cut into meatball-sized chunks.
With this combination, it definitely was not too salty, and it came out the perfect consistency using regular white rice (don't precook it, obviously.

wonderful blend of veggies and meat with a slight kick. I like it spicy so I added a little more cayenne. Definitely a keeper

This is so good. My family doesn't like shrimp so I left it out. The dish was still delicious and easy to make. I didn't have to go purchase anything extra to make this.I did use 3 cups of homemade chicken broth and added water as needed. We will definitely have this dish more often at my house.

My Boyfriend LOVES this! He loves it even more when I make it spicier for him. Ive only had jambalaya once or twice but hes had many different types and he swears this one is the best hes ever had.

Talk about comfort food!! It's warm, spicy, but not too spicy, and filling. I substitute boneless chicken thighs/breasts for the whole chicken. I've made this dish several times for company, and everyone always leaves with the recipe! The leftovers taste even better after having time to "mellow" the flavors.
