    This recipe is great, it was a great change for dinner. My husband actually went for seconds, and called the leftovers for his lunch the next day. The combination of pasta and sausage mixed with the sweetness of the squash was a pleasent suprise. Thank you Emeril!!!!

    The filling alone is enough to want to make these often. The tomato sauce is very easy to make and very tasty also.

    I made this squash last year after watching Emeril do it on television, we had it 4 times, and this year we have made it twice. Tastes great! Can be made ahead, and then microwaved to serve on a busy day. 2 thumbs up! Cindy

    We have had this recipe 4 times, last year alone while acorn squash were in season, saw Emeril making it on his show, and HAD to have it. We are making it tomorrow night for dinner. Love it, easy to make, also!
