    This was easy to make. On a cold raw day it would warm you up and stick to your ribs. Good soup Emeril.

    I can't cook worth a damn, and I made this soup. It was amazing. Usually, my garbage disposal gets most of my attempts but this recipe was so easy I actually made it and ate it. Even froze extras and they were just as delicious when warmed up.
    Making it again tomorrow, beans soaking now.
    Buy the chicken from the rotisserie, and just throw everything in a pot like the recipe says and "BAM," you've got a killer soup.
    Just don't tell any of your friends that you got it from Emeril... ;-

    This is a great recipe. Like the authentic Caldo Gallego soup. It is great for cold nights. Must use Chorizo..no substitutions~~~~

    This soup is wonderful. Good comfort food. I would split up the process into 2 days and then it seems easy. Day one: Get beans soaking and boil a whole chicken to make your own chicken stock and then you use the shredded chicken in the soup. I boiled the chicken with a bouquet garni, salt, pepper and some onions and carrots. Day 2: Prep the rest of the soup. The recipe doesn't say to add the cooked bacon back in, but I did. I also added a small amount of spicy low fat sausage (that I fried in a pan first and this added good flavor.

    I like white bean soups, but they can sometimes be bland. I decided to give this one a shot and was really happy with it.
