I read a few reviews that mentioned the rice and beans got very mushy. I think the trick is after you add the rice, beans, water (or chicken broth cover and let it simmer... At this point... Leave it Alone... Don't Stir it! or it will get mushy and break apart.
I thought this recipe was very tasty and made a TON, even after I halved it. I used 1 c of chicken broth and it only needed to cook for 15-20mins. I used fresh tomatoes and half of a jalapeno instead of canned and was very generous with the amount of peppers and onions.

Very yummy and satisfying. I added two serrano peppers to kick up the spice. Half a recipe fed 3 of us fine, with enough left over for another meal.

Simple and easy. I used a b whole grain brown rice. Cooked the rice separately since it takes 50 minutes to cook and then sit for 10 mins. In the meantime simmered the other ingredients together and added rice at the end. Lots of compliments. A definite repeat!

Great as a basic recipe to use as a jump-off to your own signified taste. I added chipolte's with the adobo sauce too, finishing with fresh cilantro. And seriously who doesn't love cumin?

You know what I love about this recipe.....NO SALT! OMG the food network chefs use WAY TOO MUCH SALT in EVERYTHING! I'm cooking this one tomorrow. More comments to follow.

This recipe was just... it wasn't good. It tried too hard and had no harmony of the flavours. I'm really disappointed, actually, and I'd hoped for a better outcome. Next time, skip this recipe and choose another.

It was excellent, everyone loved it, but I did add a chipotle pepper in adobo sauce to kick up the heat a notch. This is a new household favorite.

Excellent recipe! I used one onion and added 1/4 cup of cilantro on the second half of the cooking process. I also suggest that you try adding 1/2 tablespoon cumin to the recipe and garnish with a dollop of sour cream, a tablespoon of salsa & some corn chips. High five!
