My family hates catfish so I used steelhead trout (a mild salmon and it was great! It is impressive fast and a complete meal in one package. You can vary the seasonings, any herb combination seems to work.

This was the first time that I cooked catfish and really the first time I remember eating it. I didn't know what to expect but it was a really simple and tasty meal.

What a great recipe! Not only is it tasty - but there is an awesome presentation. It is so easy! Great dish to make to impress a first date OR the in-laws!! Another bonus is that it bakes so nicely in its own juices that the fish is tender and the house doesnt end up smelling like a fish market. 5 stars really! Try it.
