    I was rally excited to try this recipe and followed it exactly. I was totally disapointed. I fried them on high and fast and crunchy. They came out of the skillet nice, but within minutes after draining on a paper towel the first and 2nd batch were all soggy before I could finish the rest of the sticks. I served them as a side dish to spagetti and my husband tried one, didn't finish it and said buntly he did not like them at all. Not a keeper for us.

    I loved the recipe, but I like a little more spicy. I'll "kick it up a notch" next time. It makes me want to dip everything in sugar... almost.

    I have never liked eggplant but I tried this recipe back when I saw the episode on tv, and I have to admit that I actually enjoyed eating the egplant sticks. I am not an eggplant convert but I will make these again and I am glad I finally bothered to look for the recipe.

    My husband thinks I'm a gourmet chef now! Thanks Emeril.....You save me during long nights of insominia! The recipe was simple and delicious! Its an easy recipe and quite tasty. It does so remind me of my treck through Greece.

    These were really good. I was a little skeptical about the powdered sugar, and you could eat them without it, but it was a nice touch. I was really surprised also at how quickly these cook. They looked done long before I thought they would be. The inside was wonderfully soft and the amount of seasoning was perfect. I'll definitely have these again, but next time my husband is going to have to make them!
