    I was looking for a light dessert that combines pumpkin and sweet potatos together and this was the only one i found!! I made the mixture from fresh meduim pumpkin (cooked, 1 sweet p., 1 egg, 1/2 cup of sugar, vanilla, 1 cup skim milk in the food processor untill very smooth. I sprayed a pan and i elimianted the pie crust to be even lighter, and poured the mixture in with some rasains and coconut. Preheat oven 400. It was delicious even warm and very silky like the consistency of a pudding. My husband loved it and I did too. I prefered it warm though. Next time I'll use splenda instead of sugar and it will be guilt free!! :

    I made this pie for my husband. Since he absolutely LOVES sweet potatoes I figured I couldn't go wrong with this one. And I was right. this pie was not only fantastic but it was so easy to make. I actually did bake the sweet potatoes in the oven but then thought next time I could try them in the microwave to speed up the process. Then I just put sweet potatoes and all liquids in the blender. Once that was mixed I added the sugar and spices. So good and no lumps! I'll be making this for my father-in-law this weekend.
