@Camandari... I had the exact same thought! Meatballs instead of oysters? haha! Anyhow, I made this exactly as you did, except I added some tasso that I had chopped and browned... Delish!

Re: reader below: why would you make an oyster casserole with meatballs? Anyway, this recipe WITH OYSTERS is divine. I didn't have mushrooms so just omitted them; Used a can of artichokes (drained, cut in half, & NOT boiled ... 1/2 & 1/2 instead of heavy cream to make it a tad less fattening; Substituted Panko crumbs & mixed them with 2 teaspoons of Emeril's Essence. Perfection!

Everything worked well together. I made my dish a little spicier by adding smoked hot paprika,just a little. wonderful

I like this recipe, however I made my own variation of it...instead of Oysters I used leftover Italian Meatballs, sliced. Also instead of heavy cream I used whipping cream. Nonetheless, it came out pretty good. Next time I will also use large bread crumbs from sliced bread to make the topping instead of packaged bread crumbs.
