I made this for my aunt and mother today for lunch. I served it with cut up veggies and mini whole wheat pitas for dipping. We all were first not so impressed until the flavor snuck up on us and we were soon wanting more. The dip is really satisfying and healthy. I am looking forward to leftovers tomorrow.

All I can say is WOW! I saw Giada make this on her show and thought I would give it a try. It turned out ten times better than I ever could have imagined! I don't have a food processer, so I just made it in the blender and it turned out great. I used more balsamic than she said to in the recipe, I think it gives it a really great bite and adds flavor. I tried eating it with the endive slices like she did in the show, but ended up liking it more with pita chips. A great tasting way to fool picky eaters into eating veggies!

I made this dip exactly as Giada did on TV! used COSTCO's pita chips and celery as dippers! Yummy... This would be HARD to beat. It's really excellent and I highly recommend it! * a bit more balsamic or lemon wouldn't hurt a bit*

I actually added more garlic but I love garlic. Definitely use the balsalmic vinegar, I was wary at first because I thought it would be overpowering, or even worse sweet when I'm going for a savory dip, but it was perfect in the dip. I used it as a snack with pita chips and topped a chicken breast. HEALTHY, EASY & DELISH!

I have served this as a side dish for family dinner and as a regular dip during the holidays and have gotten rave reviews! I added some mozzarella cheese during while blending it and it makes it more creamy and delicious. To offset the baby-food coloring, I sprinkle some mozz. ontop and it does the job perfectly.
I don't put too much garlic in the blender which helps and I've also added some artichoke to mix it up, which is also very good.
I've served it using crackers, pita chips, and endive spears- all delicious! Easy recipe to make and very yummy!

I made this dip for Thanksgiving and it was disgusting. The spinach was sour tasting and no one enjoyed it at all.

I've made this a couple of times - everyone loves it. I used frozen chopped spinach - a 10oz box - thawed and squeezed dry and I just grated two cloves of garlic right into the food processor. I left the balsamic vinegar out because - well it seemed odd to me - I did however add a little lemon zest along with the lemon juice - seriously - so good!!

I love this dip!!! Its so good with whatever vegetable you have and it is so good for you but you cant tell!!
