This was even better that I thought it would be. It was a nice change from hummus I always make. I used one pkg frozen drained spinach and one bag of fresh, worked just fine. I also doubled the garlic and used a bit more fresh lemon juice. In my opinion, it tastes best right after you make it. Once you put it in the fridge it really loses something in texture and taste becomes bland. Seems to dull them. Also, I think it tastes GREAT with the belgian endive like she used on the show. We did not even use the pita chips in the bowl for it. Yum and lo cal, what a winner!

I smeared the dip inside whole wheat pita and added fresh tomatoes for a healthy lunch that filled me up!

The recipe is good - and, remember, if you like more of any on thing (or LESS, you can always add, subtract, increase, or decrease any ingredient. Don't like garlic - leave it out, or just use less. Taste the food - if it's good, leave it. If not, adjust to you taste. And by the way - to the person who didn't like Giada's pronunciation of Italian words: The woman is ITALIAN (she was born in Rome, if I'm not mistaken. Every single native Italian I have ever met has done the exact same thing, in terms of pronunciation. Thsi is what ITALIAN people sound like! Get over yourself.

I made this dip last night and my family just LOVED it! We used it as more of a "spread" on salmon and chicken. Today it went in wraps for lunch! Will become a regular recipe in our house!

I enjoyed this recipe about as much as I enjoyed watching her make it. Will not watch her and listen to her phony Italian pronunciations again. Prrrrshoooootu and spegeeeeeeeeetii.

This is a great alternative to a mayonnaise based dip! It's creamy from the beans and the balsamic adds an interesting flavor in the background. One of my new favorites.

I'm trying to eat more spinach and salmon - not a big fan, but THIS dip really was quite good. It DOES taste like spinach, don't get me wrong, but it was absolutely yummy - I added a couple sun dried tomatoes and at the dip with whole grain organic crackers. QUITE DELISH
