Replace the veggies with anything you want. Have added bok choy, green pepper, turnips, etc. instead of mushroom and peas.

I've made this several times, but can only find fresh shiitake mushroom, but it's is SOOOOO good and super easy to make. Just have all your ingredients prepped and ready to go, cause it goes together fast! Delicious and Yummy!

I added shrimp and bunch of vegetables. You could use any protein and vegetable with this dish - very versatile. I used twice as much soy and sesame oil. I will definitely make this again.

I make this with breakfast sausage and its WONDERFUL!! My hubby isn't crazy about it, but then he doesn't like fried rice in general. I fry the eggs in grease from the sausage instead of in oil and it makes it even tastier.

This was really delicious and a good way to get in some whole grain, protein and veggies for the family. Just be sure to chop that ginger up really good. I had some bigger chunks and it was yucky to get that bite. My 16 month old absolutely loved it and ate a ton. I used chicken for the protein.

My family and I loved the rice. It was really awesome. It's something that you might expect when eating at a restaurant but to me it was more satisfying because I made it. I was in a rush so instead of mincing the carrots, I sliced them really thinly. My local grocery store didn't have the mushrooms called for in the recipe, so I just left them out. But it was still fantastic, if I'm allowed to say so myself. :

Very good recipe for fried rice. Great for using up left overs or cleaning out pantry. The best tip I can give is to use cold or cool rice. The starchs seem to be less sticky.
