I did it with just a 3 pound turkey breast cooking for 2. It came out perfect, very moist, and very easy to prepare.

Very easily prepared for a few or for many as I do. Sometimes up to 30 very Sunday, not just on Thanksgiving.

This is the perfect basic recipe for anyone who has never cooked a turkey before and is more than a little intimidated by the entire process. This simple recipes yields a succulent turkey breast and a tasty gravy. While the recipe only advocates rubbing butter on the skin and inside the cavity, I recommend also rubbing butter underneath the skin to keep the meat extra moist. Overall, I was extremely pleased with this recipe, and I feel very confident heading into the holiday season.
