These were SPECTACULAR!!!! Forgot to post a review, but I made these for a Christmas party last year & everyone raved about them... especially my husband (he ate half the batch. This was a last minute thing, so I used lunch meat chicken that I got at an Italian deli, but it was still delicious! I will definitely be making these again.

this was great...but I thought little heavy as an appetizer. After a couple, I was FULL!!! It easy was to make and I loved the apricot and chicken together. But, I was not a fan of the fontina, so I just picked it off and ate it without and it was still good! Next time, I might try a different cheese.

I served this as an appetizer for a family party. Everyone raved over it, and they kept asking me for the recipe! There were none left by the end of the evening! I will definitely be making this recipe again!

This one really gets the praise no matter where or when you serve it. Taking from another recipe, I combined horseradish to taste with the apricot jam. Just enough to make it a bit spicy but not overpwering . The horseradish adds a bit of hot to the sweet and leaves everyone wondering about the seasoning.

These were a hit at Thanksgiving. To prep ahead, I made the crostinis in the morning, sliced all of the cheese into the right size pieces, and I decided to loosely wrap the chicken in the prosciutto (wrapping for assembly simplicity, but "loosely" so that the prosciutto could crisp a little later. I put everything in tupperware and assembled at the party. Then, following another user's suggestion, I popped them under the broiler for about 2 minutes to crisp the prosciutto and melt the cheese. My family was blown away, including the picky, globe-trotting foodies in the bunch. I used to live on a similarly styled sandwich that I invented (which is why this caught my attention, and this is a truly fantastic appetizer. Thank you!

This was a last minute appetizer I made for a party. This was the hit of the party and was so easy to make I felt guilty about the rave reviews. I have since made this into a panini for myself for lunch with a small salad and it is my new favorite!

Did this for an NFL tailgating party. Pretty much stuck to original recipe but rubbed fresh garlic over baggette slices when they came out of the oven. Transported everything the next day and offered a bit of EVOO and reduced balsamic to drizzle over. Great with a nice red wine!. You will love this!

Wonderful flavor combination. Made these for a large dinner party substituting french baguette for ciabatta. Don't recommend crisping as other comments indicated until ready to serve.

We had some of our "foodies" guests over to celebrate at the holidays and my husband decided to serve this dish. He's not to big on cooking, or fancy foods, but this dish was a hit! Everyone loved it! Even the non-meat eater enjoyed it. I would definitely recommend it. We're serving it again tonight at a wine and appetizers get-together. Enjoy!
