    This is the first time I ever had eggplant parmesan and I was completely impressed. Now I admit I didn't cook it so I can't say much about the preparation. I will definately eat it again.

    I used this recipe for a potluck and everyone really went ga-ga over it. It's easy and fun, but pretty time consuming, so make sure you have a few hours on hand to make it delicious. Weeping out the bitter juices is more important than you can imagine!

    I prepared this a few week back, and the prep time did take a while (especially if you make the "quick" marinara sauce as well, but the eggplant parmesan came out excellent, and was well received by all famiyl members - and we're a meat and potatoes type family! Try it, you won't be disappointed.

    This was an excellent receipe. I followed the directions and came out with a very tasty dish. My husband truly enjoyed this meal. Although it does take a while to make, it is well worth the time and effort.

    This was a great simple recipe. I consider myself a good cook but I always had trouble making eggplant dishes. I love eggplant. The eggplant "purging" was just the trick. This time my eggplant parmesan came out perfect.
