I read alot of complaints on this recipe being too salty. A Piece of advice. Salt is not required is MOST foods. As Americans we tend to eat way too much salt. The amount of sodium we need in our daily diet typically can be found naturally already in the foods we eat without adding more.
With that said, I would like to encourage those of you who read recipes to apply some common sense. just becuase something says to add 1 TBSP of Salt, or 1/8 tsp of salt, common sense should tell you whether to add salt at all or not.
Recipes are guides. As to my rating of this recipe, it was 5 stars but then again, I applied common sense on what I used in the recipe. I used maybe 1/8 tsp of salt for the whole recipe. The salt from the Parmesan cheese that is found naturally, the salt already left over residual in the eggplant from the wheeping as well as the mozzerella cheese should be enough salt for most peoples taste. As a result, I give this recipe 5 stars with the modifications I made to omit all the excess sodium.

It was a bit salty, but I think it's because I used seasoned bread crumbs. The salt will be an easy adjustment for a really great recipe that does take a little time, but as I get used to preparing, won't be a big deal. I will save so much money now that I can make it myself instead of buying restaurant/frozen eggplant that doesn't satisfy! Husband and 7-year old LOVED it (neither had eaten eggplant before, and brother and mommy devoured it. Can't wait to show it off for family events!

This was good but way too salty for me! My son (22 months old was very put off by the salt as well as my husband. I had read the reviews but apparently forgot to decrease the salt. I rinsed every piece of eggplant seperately before using. Would try it again but more on a day when I have nothing else pressing for time as it did take longer than I expected.

This dish lets you eat it! A bit time consuming, but fun to make. It can win over those who frown at the mention of eggplant.

This is a delicious dinner, but working people might want to save it for weekends. It does take a bit of time. The sauce is tasty and easy and can be used in a variety of ways. Four of us ate this meal, and one thought it was salty. However, everyone ate seconds, and it did go to work for lunch the next day. (Makes quite a lot. We used a deep fryer for the eggplant and that worked well, although next time I will try baking it as another reviewer suggested. (I must remember to read reviews before making the recipe! Overall, 5-star delicious.

I tried this and my wife and I love it. Letting the eggplant weep with the salt is the thing this dish was excellent took some time but very easy. The rewards are worth the work mmmmmm. thanks you

When I bought the eggplant my husband said I know you don't expect me to eat that". Boy did he eat those words. He loved it took a little to work the next day so his secretary could taste it. It is time consuming but easy and foolproof. A great sidedish for when you are having people for dinner!

Didn't anyone find this too salty? I rinsed the eggplant as instructed but the amount of salt added to the marinara sauce and to the breadcrumb mixture was just way too much. We could barely eat it!! My husband usually uses quite a bit of salt on all his food - good thing I warned him to taste it before adding more table salt. Yikes!!

This was so tasty. However, it was A LOT of work. I didn't have time to make the sauce. So, I used a jar from the store. Next time I'll be sure to give myself more time. Definitely takes longer than 1 hour and 15 minutes to prep.

My husband and I love this.This is the first time I tried eggplant Parmesan and it was a very easy recipe to follow. But the only thing I didn't like in this was the taste of fried oil which was very distinct. Though this was a problem only for me and not for my husband
