    does anybody else think boiling the bacon is a weird idea? sort of dilutes the flavor.
    I skipped that and chopped the oysters so they distributes the flavor more evenly I did a test batch before I served it. Would make again.

    I liked the spices and the use of cornmeal was a nice change from typical stuffing however next time i think i will use half of the recommended butter - it was too greasy tasting. Overall I enjoyed it.

    Use large, tasty oysters for best result. Great for year-round. Easy and very tasty and something a little different.

    My husband and I both liked this recipe, but I think next time I would chop the oysters to a smaller size. The cornbread was good, but I think if it had some white bread crumbs mixed in, it would hve been a little more moist.

    I followed the recipe to the letter, too, and had high hopes. I thought it would be a treat, since there were many Alton Brown fans at the table. I'm going back to mom's oyster stuffing (dressing. The cornbread in this recipe didn't have the right consistency and ended up too grainy/crumbly and not at all bread like. All twelve at the dinner table expressed surprise that I had switched up a Thanksgiving favorite. Considering the price of the fresh oysters, this was a very expensive disappointment.

    As a land locked person with limited access to fresh oysters, I was fortunate to have a friend bring me some from Rhode Island and I used them to make this recipe. I think it was one of the best Thanksgiving stuffing recipes that I created.I would recommend it to anyone who likes oysters.

    I tried this for the first time at Thanksgiving following the recipe pretty close (I also added cornbread stuffing mix. Only thing I would do differently is to not add the oyster liquor. It made it too fishy. Maybe next time I'll use chicken stock with a little oyster liquor.
