    Very good. I added a little sage, too which adds a nice flavor. For some protein I also added a can of butter beans, rinsed and drained. Yum! I think next time I will also add mushrooms to give a little more flavor and juice. Might also top with parmesan. Will definitely make again.

    Try preparing in a large cast iron pan and cracking a few eggs in. Prep each area by sliding the ratatouille to the side and adding a dot of EVOO then cook eggs to desired done ness. I also cooked off a few tablespoons of bacons with 2 chicken sausages and added that the the mix. My 3 year old ate two adult size servings! Very kid friendly!!!

    I was inspired to make Ratatouille after my friend ordered it at an Italian restaurant. She had it served over pasta, so I wanted to recreate the dish she ordered at home. This recipe was the perfect find!

    I followed the recipe precisely until the end. In addition to the ingredients Emeril calls for, I added about half of a 28 oz. can of tomato puree, some crushed red pepper flakes, and dried oregano. I served the sauce over whole wheat rotini and topped it with shredding parmesan. I will be making this recipe for years to come! The whole wheat pasta is a really nice complement to all the veggies.

    This was my first time ever making ratatouille and it was easy and delicious! Plus the recipe had enough for left overs for lunch tomorrow with a healthy grilled chicken breast and mixed green salad!

    DELICIOUS! My first attempt and I will definitely make it again. I'm a messy cook and my kitchen shows the effort. It's easy and fast. Love it. Recommend it. My picky hubby ate it up.

    My first attempt at Ratatouille, it was wonderful! Good thing I know how to prepare these veggies already, I thought the instructions were lacking somewhat for inexperienced cooks. I love the flavor, the color, the aroma, everything. Even my picky 4 year old loved helping, and even better loved eating this dish. My only caution is making sure not to eat this as a main dish. Although it IS surprisingly filling, this many of this type of veggies has a bit of a laxative effect. I can't wait to tweak this recipe the next time I make it. We buy our produce at a local farmer's market, it is cheaper. If you just eat this as a side dish it will stretch it out for a couple of meals too.

    I am so upset.
    We live on a fixed income, and I can only make one fancy meal a week. I chose Ratatouille because I always wanted to experiment, and it was Emeril's recipe. The ingredients was both mushy and hard, bland, and expensive. My family would not eat it after all the work I put into this dinner. I would NOT recommend trying this recipe!! Actually, I would like a recommendation for another Ratatouille.
    Read the reviews, people comment things to add flavor (e.g. Ketchup, Balsamic....
    I won't even rate this recipe. It doesn't even deserve 1 star.
    WOW, I have to rate or my post will not go up. Still a "0"

    My first attempt at ratatouille and it turned out quite lovely. Great flavor and color to the dish. I would suggest seasoning as you add each layer, rather than at the end.
