Along with being easy to make and a change of pace kind of recipe, the most wonderful thing about this meal is that it tasted even better a couple of days later as a leftover. I found that I had to use more peppers than the recipe called for in order to have enough rings to fill. Trying to use big peppers made the meat filling difficult to manage (moving from tray to pan and later turning while frying. The recipe was a little unclear or inexact in some instances. I also didn't seem to have enough tomato. All in all, a recipe worth making again. I served mine with steamed rice. Thanks Sunny - - your a delight!

As a first time viewer, I was captivated by the "everyday" manner of the hostess. She seemed like someone that is approachable and the directions were easy to follow. I am NOT the cook in my household but was determined to try this recipe and it was absolutely delicious! My husband was happy and I felt proud to prepare a dish without the fire alarm sounding off. I will definitely be tuning in to this show regularly... Thanks Sunny!

Made this for the first time and had to use more than three peppers. After trimming off the top and bottom, I could only get two one inch slices per pepper, not three. Also, I wasn't sure if the tomatoes had to be drained since the recipe didn't specify, so I used the juice. It seemed too runny so I added some bread crumbs to the mixture. I don't ever have white bread in the house so substituted five-grain bread. The recipe is not real clear when it says to add tomatoes to the pan. You have to saute the peppers on the stovetop, transfer them to the baking sheet you first started with, add the remaining tomatoes to that pan, not the pan on the stovetop, then bake in oven. I skipped the fried sage and used dried sage in the ingredients. It was a very delicious meal and I'll definitely make it again. Thanks Sunny for the great recipes you show us. Your show is one of the best on the Food Network.

I followed this recipe and included my own variations to this dish. I used ground beef and sweet Italian sausage and it turned out great. In the past I have made the traditional stuffed peppers, my family would always leave more than half of the bell pepper still on the plate with the stuffing gone. With this recipe I realized that it's all about perception for the picky eaters in my family. With each bell pepper you can get about three rings, well both my husband and daughter went back for seconds. They both ate a whole bell pepper without realizing it. LOL. Sunny once again Thank You for another great recipe that is easy to make and tasty.

Didn't have all ingredients such as sage, hot sauce or ground turkey (used beef...didn't need them, still tasted great!
The directions are vague on bake time. I browned them in the pan, then placed on sided baking pan in oven for about 15-20 min or until cooked throughly. While in oven I gave each a scoop of a tomato & ketchup mix to cook for the last 5 min.

Colorful, tasty & EASY... Even those who don't eat peppers, ate the meatloaf out & loved it!

Maybe the folks who didn't like it should try again with fewer or name brand ingredients. If you don't like hot sauce don't use it... or such.

Made this with the mac & cheese for Sunday dinner - family loved it. Next time will add more tomatoes.

This was easy to make and pretty in the pan...but the taste was kind of bland. I even tried the small amount in the pan first then added some more garlic, salt and pepper. But it was still on the bland side. It was fun to try but probably won't make again.

    Go Sunny,

The first time I had this meatloaf my husband made it for us for dinner. He used yellow and orange peppers and it was scrumptious. I've made it myself a few times and we just love it. One of the best meatloaf recipes I've tried. Totally different in the pepper molds.

I make meatloaf for my husband and I probably once per month, so we're already meatloaf fans. But this recipe was spectacular. It's not only delicious, but fun in preparation and presentation. We LOVED it. The peppers really added a lot of flavor. This will be the new way I make meatloaf from now on.
