    This recipe was okay but I mixed this with Emeril's recipe for carrot cake and it was great. All of my friends were very impressed!

    This cake was easy to make and absolutely delicious. My family and friends raved over this cake during the holidays and thought it came from a gourmet shop. I did ice the cake with cream cheese icing. Great!!! Looking forward to using recipe again.

    I got rave reviews at a company potluck. Everyone wants the recipe. This is the very best cake recipe ever! I used cream chesse icing, but would still be great with powdered sugar.

    Excellent. Eliminate the coconut and replace walnuts w/pecans. Also use Emeril's pecan cream cheese icing recipe instead of using frosted powdered sugar.

    Highly recommend this recipe! I toasted the walnuts first and topped it off with cream cheese frosting. Will definitely be making this again.

    This cake was a hit at my Easter Dinner. I also tried it with cream cheese frosting, which was good. And, I followed someones advice on not using as many nuts, which I liked. I was a little confused because it said to use a 10 inch pan, but it filled to round 9 inch pans, so I was not sure on what kind of pan to use. But, it was good, and I will make it again.
