    I made this for my husband's birthday. Everyone loved it! I will ice the cake next time, to see the differance.

    I made one big alteration to this recipe by using spelt flour instead of wheat (for our gluten-intolerant friends. It turned out great! Very moist and delicious and chock full of yummy things.

    This is my wife's favorite cake. I have made this three times and it just couldn't be improved upon. We love it and I am making it tomorrow to take on a trip so my relatives can enjoy it, too.

    I could never bake a good carrot cake until I tried this recipe. It is easy and delicious. We made half recipe and got 12 big cupcakes. My children loved to make and eat it.I ate 3 cupcakes myself, that was the only bad thing about it.

    My favorite dessert is carrot cake, so my wife made this recipe for my birthday cake this summer. We had enough batter to make a second smaller cake which we gave to some friends. Excellent reviews from all!

    I expected this cake to be so good since the recipe is from a pastry chef but there way too much going on. It was okay but I didn't care for the raisins and pinapple. My husband didn't like it much either.
    Really easy to make though.

    I MUST SAY, I HAVE NEVER HAD SO MANY COMPLIMENTS ON SUCH AN EASY CAKE TO MAKE. THIS IS THE BEST CARROT CAKE I HAVE EVER HAD, IT IS THE FIRST THING PEOPLE REQUEST I MAKE FOR ALL OCCASSIONS. THANK YOU!!!

    This is the first time I cook my favorite cake. Everybody loves it!! I wasn't sure about which one was the texture of the eggs but it came out great. Although, I am not a big fan of walnuts...so next time I will use less walnuts. For the walnuts lovers you will find a lot of walnuts in every piece of cake. Defenetly to the do it again list!!!
