I had the butcher cut the veal in a scalopine thickness for me. it worked well but I would have liked it a little thicker

It took a little time to prepare, but was well worth it. The veal was tender with a wonderful flavor from the mushrooms and Madeira. The recipe was requested by our guests which is always a good sign.

I made this last night and it was absolutely wonderful! I subsituted the dried Porcini Mushrooms for chopped fresh baby portabellos and the flavor was amazing. Thanks Emeril!

This recipe is so delicate, when you bite into the veal you'll think you died and went to heaven. Everything about this recipe is savory and succulant. I promise you'll most definitely, save this one to your recipe box. ENJOY!
