The sauce is wonderful on this steak, and equally tasty when served alongside the roasted garlic mashed potatoes made in the same episode. The whole meal was great - my teenager even ate it!

I have to say right off that this sauce got mixed reviews tonight. About half of us liked it, the other half did not. Here was my husband's comment "I like this but please don't make it again. The smell makes me feel sick." And that's it in a nutshell. If you don't like gorgonzola or blue cheese or any strong cheese, don't make it. Or substitute something you do like. Because gorgonzola, even the one I bought that is kind of mild, is strong. And it does have an odor. But for those of us who like cheese, this is a pleasing odor. So, on to the meat. The cooking directions were dead on. If you are afraid of cooking flank steak, follow these directions carefully and you will be a convert. Flank steak has gotten a bad rap - by people who have no clue how to cook it. If it's overcooked, you might as well give it to the dog. But if you cook it a tad less than what you think is done, then let it sit for the required time, and then slice it very thinly, it's wonderful.

I have a very picky husband so of course when I was amking the sauce he complained about the smell. But honey when it went to his lips he looked at me in disbelife and said WOW this has so much flavor as he's now dipping his vegatbles in it. This sauce is very flavorful with a nice rich smooth texture. I highly recommend this sauce.

I was in Europe last year and every steak I ate had some sort of sauce on it. I LOVED IT! But when I got home and wanted to replicate what I had eaten, I couldn't find a decent recipe until now. I have never been a fan of bleu cheese, but this recipe made me a true believer. Thank you, Neelys, and keep up the good work! P.S. I was in Nashville last month and couldn't visit your restaurant. Could you come to New Hampshire and show us Yanks how really great food tastes?

I wasn't a big fan of flank steak but I am now! This was delicious, easy and the cream sauce is to die for! I used Ina's recipe for roasted asparagus as a side dish. Definitely a 5 star meal!

I have made this Gargonzola Cream Sauce twice. Once for my boyfriend and the other for dinner guests the very next night. It was such a HUGE hit!! Great on flavor and super easy to make (it also made me look like I knew what I was doing in the kitchen!! lol
Luckily I read the reviews before I made the sauce which helped me alot. I did cook the cream down to a little more than half before I added the Gargonzola which made for a creamier sauce. This recipe is one of my favorites!

This sauce is incredible. I made it for my husband to put over the flank steak and found myself picking at it and finding other uses for it. The flavor is amazing and it's so easy to make.
